Pop!_OS is an Ubuntu-based distribution developed by System76 which features the GNOME desktop. The distribution's developers have published a testing snapshot for the upcoming version of Pop!_OS 18.04. This testing snapshot includes a new installer that offers full disk encryption. However, the new installer also has the limitation of not offering custom partition layouts and will wipe the drive. "Our first iteration of the 18.04 ISO is ready for testing. In this release you'll notice new features including: A new installer experience. Full disk encryption by default. USB flashing utility. Testing the new installer is our priority for this test release. Dual boot setups are not currently supported but will be by the final installer release.
